From msWiki

A profession is a series of skills that can be learned within World of Warcraft. There are a total of 9 Primary professions and 3 secondary professions. You are allowed to choose only 2 primary professions to learn. However you can learn all 3 secondary professions in addition to your 2 primary choices, if you so choose.

The Primary professions are divided into 2 catagories, gathering professions and crafting professions. The gathering professions consist of Herbalism, Mining and Skinning.

Gathering Professions

Herbalism: An herbalist travels the world picking herbs. These herbs are then used by an Alchemist (see Alchemy, below under Crafting Professions) to make potions. Herbs vary in level and variety based on the territory you are in. Herbalist have a User Interface feature that allows for them to spot herbs on their mini-map as they travel thru a territory.

Mining: Miners seek out ore veins from which they gather various types of Ore, Stone, and Gems. In addition to gethering these materials, miners also have the ability to smelt the Ore into bars. The Ore, Stones and Gems mined can then be used by a Blacksmith (see Blakcsmithing, below under Crafting Professions) or an Engineer (see Engineering, below under Crafting Professions). Similar to the herbalist, miners also have the ability to track ore veins on their mini-map.

Skinning: A skinner procures leather and hides from beasts that have been killed. Prior to skinning the beast has to have been looted. The type of leather that is skinned depends on the level and type of beast. In addition to the general leathers skinned from all beasts, certain beasts skin special materials such as dragonscales, hides, turtlescales, scorpid scales etc...

Crafting Professions

Alchemy: Alchemists use herbs and other materials to create potions that can aid the player in many different ways. There are potions to give health, mana, added abilities, Stats bonus or even more resistance to a specific type of magice. Some are instant effects and some stay with a player over time. In addition to potions, alchemist also transmute materials. This is used to either combine 2 materials to create a new item (for instance creating an arcanite bar from an arcane crystal and a thorium bar) or to change the form of one material into another (such as transmuting essence of water into essence of air)

Blacksmithing: Blacksmith use Ore and a variety of other materials to create armor and weapons. Most of these items are Mail or Plate items that can be used by the player or sold. When leveling a blacksmith, the player with be asked to specialize in a specific type, Armorworking or Weaponsmithing. The choice to specialize is irreversible once made.

Enchanting: Enchanters have 2 main abilities. The first is to take item that are "Uncommon" or better and Disenchant them into usable materials used by enchanters. (For some players this may become a gathering profession if they do not wish to level their enchanting). Enchanters then use the dusts, essences and shards recieved from their disenchants to create buffs on wearable items and weapons. These buffs are permanent until the items is re-enchanted or discarded.

Engineering: Engineers craft items from various materials, from ore to cloths to leather. There are 2 types of engineering, gnomish and goblin. After skill level 225 you may specialize in one type. However, this is a permanent choice and cannot be changed. There are certain recipes specifically designated to each type of eningeering.

Leatherworking: Leatherworkers create leather and mail armor from leather, hides and scales procured from skinning. Like with Blacksmithing, leatherworkers are also asked specialize in a type of leatherworking: elemental, tribal, or dragonscale. Both elemental and tribal leatherworkers will make various type of leather armor that is consistant with the particular specialization. Dragonscale leatherworks on the other hand make mail armor. The choice to specialize is irreversible once made.

Tailoring: Tailor create cloth items and bags from various type of cloth dropped from humanoids within the game. Unlike some of the other crafting professions there is no specialties involved in tailoring.

In most cases most players choose to match a gathering profession with a crafting profession. For instance most engineers and blacksmiths wll also be miners, alchemists will be herbalist, and leatherworkers will be skinners. This way the player ensure the availability of needed materials to craft with.

Unlike the other crafting professions, tailoring and enchanting do not have a gathering profession associated with them, as all material needed are dropped from mobs in the games. Many players will choose to pair tailoring with enchanting as they compliment each other, and items made by the tailor can later be disenchanted for enchanting materials.
